Passatelli pasta with veal ragout in broth

Although Passatelli is not hugely known in the UK, it is an incredible pasta from the Emilia Romagna region of Italy. Made from combining Parmigiano Reggiano, breadcrumbs, eggs and a hint of nutmeg, our version is accompanied by a delicate, slow cooked veal ragout, based on simple cuts of meat, a well balance stock and fresh peas.

Barn EGGS, Parmigiano Reggiano DOP cheese (MILK, salt, rennet), bread crumbs (soft WHEAT flour “0”, water, salt, brewer’s yeast), soft WHEAT flour “0”, salt, nutmeg.

Veal ragout

Minced veal, blonde onions, white WINE, carrots, CELERY, white stock of meat [water, veal, thickener:(maize starch), carrots, white onions,CELERY, olive oil, cooking salt, pepper black], olive oil, table salt, sage, rosemary, black pepper, dehydrated garlic powder, freeze-dried bay leaves.

Cooking instructions

Opening instructions: You may find our jars are a bit difficult to open? THAT IS A GOOD SIGN! As you know our product don’t contain any preservative or additive. To guarantee the maximum protection of the true freshness of our products, our jars are put under vacuum, therefore strongly sealed. If you cannot open easily, this is just a further positive sign of this freshness preservation.

  1. Once taken out the jar from the box try to slightly unlock the cap. If it is hard to open..
  2. Use a rounded kitchen tool, like the handle of a spoon, and make leverage under the cap.
  3. When you hear the noise of the air coming out, unscrew the cap, that will be now very easy to open!

Heating instructions: Open the packages and heat in the microwave for 3 minutes to at 750w; or heat at 120° C in a preheated fan assisted oven for 10 minutes. Add artichokes cream on top of the rice pie and enjoy!
